What is E471, exactly?
E471 is the European code for mono- and diglycerides of fatty acids, the most widely used emulsifier in processed food. Chemically, it's a glycerol molecule bonded to one (mono) or two (di) fatty acid chains. One end of the molecule likes water, the other likes fat — which lets it hold oil and water together in mixtures that would otherwise split.
That one trick makes it everywhere-useful: it keeps sliced bread soft, stops margarine separating, keeps ice cream smooth, and prevents the oil slick on top of cheap peanut butter. In the EU it's authorised under Regulation (EC) No 1333/2008, and EFSA re-evaluated it in 2017 and found no safety concern — your gut simply breaks it back down into glycerol and fatty acids. In the US the same substance is affirmed as GRAS (generally recognised as safe) under 21 CFR 184.1505 and appears on labels as "mono- and diglycerides" rather than E471.
Notice what's missing from all of that: regulators approve additives on safety, not source. Which brings us to the problem.
Where E471 comes from: plant oils or animal fat
The fatty acids in E471 have to come from an edible fat — but any edible fat will do. In practice, most commercial E471 today is made from vegetable oils, with palm and soybean oil the industry workhorses and rapeseed and sunflower also common. But animal fats — beef tallow and pork lard — are equally permitted, and they're still used by some manufacturers, particularly where they're the cheaper feedstock.
Here's the part that matters for vegans: once the fat has been processed into mono- and diglycerides, the plant version and the animal version are chemically identical. There's no test you can run on the finished loaf of bread, and nothing about taste or texture that gives it away. The only entity that knows the source is the manufacturer's supply chain.

Why the label can't tell you the source
Neither EU nor US labelling law requires a manufacturer to declare the origin of an additive. EU rules require allergens to be emphasised in the ingredient list — but beef tallow and pork lard aren't allergens, so E471 made from either is listed simply as "emulsifier: E471" or "mono- and diglycerides of fatty acids". Legally complete, practically useless.

Is E471 halal? The same question, the same problem

Halal authorities generally class E471 as mushbooh — doubtful — because the source decides everything: plant-derived E471 is halal, while E471 from pork fat, or from animals not slaughtered according to Islamic law, is haram. In order of reliability, here's what actually works:
- Look for a source declaration. "Mono- and diglycerides of fatty acids (vegetable)" or "(plant-based)" settles it.
- Look for a vegan trademark. Certification covers additive sourcing, which is exactly the part you can't see.
- Check the manufacturer's website or FAQ. Big brands increasingly publish vegan lists; smaller ones usually answer emails within a few days.
